Inspired by Willie Mullins’ race colours. The sea salt ganache was chosen to invoke the sea salt in the air from Galway Bay and the view of Salthill from the Killanin stand. A silky smooth ganache is made using flakes of Achill Island Sea Salt from Co.Mayo. This is perfectly paired with a rich dark chocolate.
Inspired by the bold colours and fashion of Ladies Day. The peach filling wrapped in a white chocolate shell is inspired by Gráinne’s father’s memories of eating ripe peaches as a child at every race meet. Fruitful and sweet this white chocolate shell is filled with a beautiful peach and vanilla compote. Fresh white peaches have been selected for the making of this compote and it is paired with fragramatic Madagascan vanilla pods.
Inspired by Gráinne’s Grandfather’s race colours. The flavours of Turkish Delight in a milk chocolate shell were the favourites of Gráinne’s grandfather Captain Luke Mullins. Smooth Turkish delight bursting with rose is a heavenly match with our 35% milk chocolate shell.
Inspired by the green grass of the race course. The filling is inspired by Gráinne’s memories of getting a Toblerone on the way out by the hawkers. Soft almond nougat is made using the finest of almonds. Caramelised almond pieces add the perfect crunch. Finished with a luxurious hazelnut praline which elevates the rounded notes of the milk chocolate shell.
